We're back, Braisers. We had to go away for a while but we're back and we are ready for YOU to get your vinaigrette (again, sp?) on! 

 

  • WHAT IS A VINAIGRETTE (SP?): It's like a fun simple casual super fun super cute dressing that just so happens to be one of the MOTHER SAUCES of cooking. They can be made very quickly and with infinite variety (like my one person show!) In fact, it's been said (by me, right now) that even the most complicated vinaigrette only takes five minutes to make. I'd buy it. What I wouldn't buy, however, is a vinaigrette from a supermarket. Why? Because YOU can easily make one at home. And we are here to show you how. 
     
  • WHERE DO I USE A VINAIGRETTE (sp?): Alright so I'm only going to say this ONE TIME PEOPLE. *takes deep breathe* 
    • Toss with fruits and vegetables! 
    • Serve as a dipping sauce! 
    • Drizzle on roasted vegetables! 
    • Use to marinate fish, meat or poultry! 
    • Brush on some very good very nice bread!

  • HOW DO I MAKE A VINAIGRETTE BASE (pretty sure that's the right spelling):
    • INGREDIENTS:
      • 1/2 cup extra virgin olive oil
      • 3 tablespoons of good WINE vinegar 
      • 1 large shallot (whole if using a blender/food processor, minced if using a bowl!) 
      • Salt and pepper!
    • HOW TO MAKE: 
      • Combine everything (except the shallot) in a blender, food processor or a bowl! 
      • If using a food processor of a blender, blend for 30 seconds. If using a bowl, elegantly whisk for 30 seconds! 
      • Taste test! If something's off, you probably need more vinegar. Add it one or two teaspoons at a time so you don't over do it and embarrass yourself in front of your vinaigrette. 
      • Add the shallot and mix (either whole in the blender or minced the bowl!) 
      • Taste again, adjust the seasoning and SERVE! AND WERK! AND SERVE! AT ROOM TEMPERATURE HENNY! 
    • OTHER FUN THINGS YOU CAN ADD: 
      • Dried herbs or spices (1/8 teaspoon or 1/4 teaspoon at a time!) 
      • Minced fresh garlic! 
      • Minced red onion, shallot, green onion, etc! 
      • Mustard! (1 tablespoon at a time) 
      • Soy sauce! 
      • Thai fish sauce!
      • Honey (sp?) 
      • Grated parmesan or other cheeses! (1 tablespoon to 1/4 cup at a time!) 
      • Minced crunch vegetables! 
      • Minced pickles! 
      • Anchovies! 
      • Horseradish! 
      • Guys do you get it
      • Like you have a lot of options
      • I could add more but i don't want to be imposing
      • Does that make sense?
